Braised Chicken with Potatoes

I personally love food with gravy simply because it is so darn comforting. My personal favorite when I was growing up is braised chicken with potatoes and shiitake mushrooms. It's so comforting that I can eat all with white rice. Yummy! I cooked this two times. And I will cook again because it is so good especially on a rainy day.


Ingredients
2 chicken drumsticks
3 potatoes (cut into big chunks)
One handful of shitake mushrooms (optional*)
1 onion (cut into big chunks)
A few cloves of garlic (chopped)
1 tablespoon of oil
1 tablespoon of oyster sauce
1 tablespoon of dark soy sauce
2 tablespoons of light soy sauce
1 small piece of ginger (sliced)
1 small bowl of water
1 tablespoon of cornstarch (mix with boiled water)


1. Heat the pan with some oil. Fry the ginger, garlic and onions till fragrant.
2. Then, add in the chicken and potatoes to fry for about 3 minutes.
3. Add in one tablespoon of soysauce and water. Make sure the water covers the chicken and potatoes.
4. Let it boil; at least until the chickens are cooked through and potatoes are soft enough.
5. Add in other seasonings - dark soy sauce, oyster sauce and light soy sauce. Add in salt if it is not salty enough.
6. Stir everything together. Add in the cornstarch mixture. Stir well.
7. Serve while hot.
